Tacos are an essential food staple in Southern California. Dieting or not, it is imperative that they always remain on the menu. That being said, it takes a little maneuvering to make it macro friendly but it is totally possible!

This recipe takes only a matter of 10-15 minutes to prepare. It can be enjoyed cold or heated. You can serve it over rice, or make it into tacos.
Ingredients:
1 bunch of cilantro
10 limes
1 lb. cooked shrimp
1 cucumber
1/2 red onion
2 serrano chiles
1 avocado
salt and pepper
De-vein and de-tail the shrimp and place in bowl
De-seed and slice cucumber into quarters. Add to bowl
Slice red onion. Add to bowl
Squeeze juice from limes and combine in a food processor with serrano chiles and cilantro
Pour over shrimp, top with avocado, salt and pepper to preferred taste. Allow to marinate for a few hours and enjoy!
